Baked Oat Cake
Thanks to my kids, I was shown this new TikTok craze. These breakfast cakes are mixed in a blender and baked in a ramekin, creating this amazing cake-like breakfast that is healthy. There are so many variations you can create using basic pantry ingredients. Those of you looking for a gluten-free breakfast option, try this. I’m sharing my family’s favorite version- chocolate chips, banana and peanut butter. Slightly sweet and delicious!
Tips:
- Here’s another variation that looks and smells amazing- a Baked Betty Apple version. Blend: 1 egg, 1/2 cup oats, 1 tablespoon apple sauce, 1 tablespoon maple syrup, 1/2 teaspoon baking soda, pinch salt, pinch cinnamon. Then top with diced apple before baking as the recipe states below. 
- This can be microwaved too, which is great for the kids to do themselves. Just pop it in the microwave for 90 seconds to 2 minutes. 
Baked Oat Cake
Serves 1
PREP 5 minutes
COOK 25 minutes
INGREDIENTS
½ cup rolled or quick oats
1/4 cup milk- any milk will do. I like oat milk
½ ripe banana
1 egg
1 tablespoon real maple syrup
1 tablespoon peanut butter
¼ teaspoon baking powder
Pinch of cinnamon
Pinch of sea salt
2 tablespoons chocolate chips
INSTRUCTIONS
- Preheat your oven to 350 degrees. You could even use a toaster oven for this recipe. 
- Grease your ramekin or small oven safe bowl, about 8 oz. 
- Combine all the ingredients, except the chocolate chips, in a blender. Blend for a few seconds or until the mixture is combined. 
- Stir in the chocolate chips. 
- Pour the batter into your greased ramekin and bake for about 25 minutes or until the cake is fluffy and cooked through. 
- You can jazz this up further by topping it with more peanut butter, some fresh berries or even some more milk. Enjoy hot.
